White Chicken Chili

Ingredients: 
 
  • 4 Chicken breast

  • 1 ½ teaspoons chili powder

  • 1 ½ teaspoons onion powder

  • 1 teaspoon garlic powder

  • 1 tablespoon cumin

  • salt to taste

  • pepper to taste

  • 6 tablespoons butter

  • 1-2 cloves garlic minced

  • 1/2 cup diced onion

  • 1 1/2 cup chicken broth

  • 1 cup heavy cream

  • 4 ounces cream cheese softened

  • 1 teaspoon sriracha

  • 1 ½ cup Monterey Jack or Cheddar cheese shredded

  • 1-2 4 ounce cans diced green chilies

Steps:

  1. In a crockpot, add chicken, seasonings, butter, chiles, onion, broth, garlic, and sriracha.

  2. Stir and cook on low for 4-6 hours.

  3. Remove chicken, shred, and return to crockpot

  4. Add cream cheese (I used my bullet blender with some warm broth from the soup to make it creamy, then poured into the crockpot)

  5. Add shredded cheese and heavy cream

  6. Stir and replace lid & let cheese melt
