Queso Chicken Tacos
Ingredients:

2 pounds boneless, skinless chicken breasts

1 packet of favorite taco seasoning or use homemade

1 can (10 ounces) Rotel (diced tomatoes and green chiles)

¾ cup salsa con queso

1/2 cup chicken broth
Steps:

Place chicken in crockpot in single layer and sprinkle chicken evenly with taco seasoning.

Add chicken broth and Rotel

Cook on low for 4-6 hours, or on high for 2-3 hours.

When ready, drain excess liquids leaving just a smidgen behind, then shred chicken. DRAIN WELL!I MPORTANT STEP!! Be sure to remove the majority of the liquid BEFORE adding queso!!

Last, spoon queso on top and mix with chicken. Cover and cook on low for 10 minutes or until heated through.

Serve with low carb tortillas and your favorite taco toppings.
