Queso Taco Soup
Ingredients:

1 pound minced beef

1/2 small onion, diced

4 ounces softened cream cheese

1 can (10 ounces) diced tomatoes with green chilies

1/2 cup heavy cream
-
2 1/2 cups beef stock
-
1 teaspoon garlic powder

1 packet taco seasoning
-
Salt, to taste

Black pepper, to taste
Instructions:

Place a large pot over medium heat and add 1 lb of ground beef along with 1/2 a small chopped onion.

Cook the mixture, breaking the beef into small chunks as it browns, for about 8-10 minutes. Drain excess grease.

Add softened cream cheese to the browned beef and onion mixture.

Using a wooden spoon, mix well to ensure the cream cheese melts and is incorporated smoothly.

TIP - I personally use my small bullet to blend the cream cheese with a bit of the broth to get a nice smooth texture

Stir in the remaining ingredients and mix well

Reduce the heat to low and allow the soup to simmer for about 30 minutes. Stir occasionally to prevent sticking

Serve topped with your choice of shredded cheese, sour cream, jalapenos, guacamole, or fresh cilantro.
