Pumpkin Protein Pancakes
Ingredients:

3/4 cup almond flour
-
1/2 cup plain greek yogurt (could also use blended cottage cheese)

1/4 cup pumpkin purée
-
2 eggs
-
1 tbsp melted butter
-
2 tbsp sweetener
-
1 tsp pumpkin pie spice
-
1 tsp vanilla extract
-
1 tsp baking powder
Steps:

Combine all ingredients in a blender or food processor

Pour into a pan on medium low with butter or coconut oil.

Cook for a few mins on each side

Serve topped with butter or sugar free syrup
NOTE: This recipe lasted me 2 days. store leftover batter in the refrigerator.
