Pumpkin Protein Pancakes

Ingredients: 
 
  • 3/4 cup almond flour

  • 1/2 cup plain greek yogurt (could also use blended cottage cheese)

  • 1/4 cup pumpkin purée

  • 2 eggs

  • 1 tbsp melted butter

  • 2 tbsp sweetener

  • 1 tsp pumpkin pie spice

  • 1 tsp vanilla extract

  • 1 tsp baking powder

Steps:
 
  1. Combine all ingredients in a blender or food processor

  2. Pour into a pan on medium low with butter or coconut oil.

  3. Cook for a few mins on each side

  4. Serve topped with butter or sugar free syrup

    NOTE: This recipe lasted me 2 days. store leftover batter in the refrigerator.
