Mongolian Beef

Ingredients:
  • 1 lb Ground Beef

  • 2 tsp Garlic minced

  • 1 cup Mushrooms sliced

  • 1 tsp Ginger Paste

  • 1/4 cup Soy Sauce

  • 2 tbsp Swerve Brown Sugar Substitute

  • 1/2 tbsp Rice Vinegar

  • 1/2 tsp Chili Garlic Sauce (I sub chili crisp oil for more spice)

  • 1 tsp Sesame Oil

  • 1/4 cup Green Onions chopped

  • 2 cups Cauliflower Rice

Instructions:

  1. Add the ground beef and mushrooms to a skillet over medium-high heat on the stove and cook until browned completely and the mushrooms are softened. Drain excess grease.

  2. Mix in the minced garlic and saute for 30 seconds.

  3. In a bowl, whisk together the soy sauce, ginger paste, brown sugar substitute, rice vinegar, chili garlic sauce, sesame oil and red pepper flakes.

  4. Pour the sauce over the meat mixture and saute a few minutes longer.

  5. Top with the chopped green onions and serve over cauliflower rice.
