Chicken Taco Cups
Ingredients:

Low-carb street taco tortillas
-
1 boneless skinless chicken breast

Taco seasoning
-
Shredded Mexican cheese (or cheese of choice)

Taco toppings of choice
Steps:

Cook, shred, and season chicken with taco seasoning
-
Imagine you're cutting the tortillas in half, but leave about 1/4 inch in the middle uncut
-
Place in a muffin tin in a cup shape
-
Add in cooked chicken
-
Add cheese on top
-
Bake at 350 for 10 minutes or until the cheese is melted and the tortillas are crispy
-
Remove and top with toppings of choice
