Chicken Taco Cups

Ingredients:

  1. Low-carb street taco tortillas

  2. 1 boneless skinless chicken breast

  3. Taco seasoning

  4. Shredded Mexican cheese (or cheese of choice)

  5. Taco toppings of choice

Steps:

  1. Cook, shred, and season chicken with taco seasoning

  2. Imagine you're cutting the tortillas in half, but leave about 1/4 inch in the middle uncut

  3. Place in a muffin tin in a cup shape

  4. Add in cooked chicken

  5. Add cheese on top

  6. Bake at 350 for 10 minutes or until the cheese is melted and the tortillas are crispy

  7. Remove and top with toppings of choice
