Chicken Cordon Bleu Casserole

Ingredients:

  • 6 cups seasoned shredded cooked chicken (about 2 lb) season with whatever you like - i use pink salt, pepper, garlic powder, and onion powder

  • 6 oz ham cut into bite size pieces

  • 4 oz butter melted

  • 4 oz cream cheese softened

  • 2 tbsp dijon mustard

  • 1 oz lemon juice

  • 1/2 tsp salt

  • 5 oz swiss cheese

Instructions:

  1. Preheat the oven to 350.

  2. In a large bowl with an electric mixer combine the melted butter, softened cream cheese, mustard, lemon juice, and salt. Blend until a thick sauce forms.

  3. Add chopped ham and fold to combine.

  4. Add shredded chicken to the bowl and mix to coat well

  5. Spread in a greased 8x8 baking dish and lay the slices of swiss cheese on top of the sauce.

  6. Bake for 30-40 minutes until hot.

  7. OPTIONAL I broil it for a few minutes at the end so the cheese would get more golden and bubbly.
