Chicken Fried Rice

I love this recipe! Due to that, I make 2 different versions of this recipe - one with cauliflower rice and one with a low carb protein rice. I will list them both below!

Ingredients: 

 
  • 2 tablespoon olive oil

  • 1 lb riced cauliflower (alternatively, you could do 4 servings of low carb rice)

  • 1 carrot diced  (optional)

  • ½ cup onions sliced

  • 2 teaspoon minced garlic

  • 1 teaspoon grated ginger or 1/4 teaspoon ground (you can add more if you like a stronger flavor, I do)

  • 2 large eggs

  • 1 lb chicken precooked and diced

  • 2 tablespoon soy sauce or coconut aminos

  • 1 teaspoon sesame oil

  • Optional- garnish with scallions sesame seeds, sriracha sauce or red pepper flakes

  1. Preheat a large skillet on medium heat and add the oil. When the oil is hot, cook the onion slices for 3 mins.

  2. Add cauliflower (or pre-cooked rice) and diced carrot, if you're using them. Cook the vegetables for 5 mins, until they're just starting to soften.

  3. Add the minced garlic and grated ginger (if using ground, add in step 6) and cook 1 more minute. 

  4. Add the pre-cooked chicken to the pan and cook the cauliflower rice with chicken until it's heated all the way through.

  5. Push the fried rice to the side. Beat two eggs in a small bowl and then cook until the eggs are scrambled. Combine the scrambled eggs into the rice mixture.

  6. Add soy sauce and sesame oil and mix to combine all ingredients. Adjust the cauliflower fried rice with chicken as desired, whether that be to add more soy sauce, or add salt and pepper.

  7. *optional* garnishes include green onion slices, red pepper flakes, sriracha sauce, and sesame seeds. Enjoy!
