Buffalo Chicken Mac & Cheese

I made this as a 1 person recipe, adjust for a family.

Ingredients:

 
  • 1 piece chicken

  • 1/3 cup heavy whipping cream

  • 1/4 cup cottage (i blend mine to be smooth) (optional for extra protein)

  • 2 tablespoons Franks Red Hot

  • 1/3 cup shredded cheddar, divided4

  • 1 cup riced cauliflower, steamed

  • Salt and pepper to taste

Steps:
 
  1. Dice, season, and cook chicken. Set aside

  2. In a pan add whipping cream, cottage cheese, and 1/2 cup of cheddar cheese

  3. Warm until combined
  4. Add buffalo sauce, salt, and pepper & stir
  5. In a baking dish add cauliflower rice, cheese sauce, and diced chicken
  6. Mix 
  7. Top with the remaining cheddar
  8. Bake @ 375 for 10 minutes
  9. *optional* broil on high for 3 minutes to brown the top
