Buffalo Chicken Mac & Cheese
I made this as a 1 person recipe, adjust for a family.
Ingredients:

1 piece chicken

1/3 cup heavy whipping cream

1/4 cup cottage (i blend mine to be smooth) (optional for extra protein)

2 tablespoons Franks Red Hot

1/3 cup shredded cheddar, divided4
-
1 cup riced cauliflower, steamed
-
Salt and pepper to taste
Steps:

Dice, season, and cook chicken. Set aside

In a pan add whipping cream, cottage cheese, and 1/2 cup of cheddar cheese
- Warm until combined
- Add buffalo sauce, salt, and pepper & stir
- In a baking dish add cauliflower rice, cheese sauce, and diced chicken
- Mix
- Top with the remaining cheddar
- Bake @ 375 for 10 minutes
- *optional* broil on high for 3 minutes to brown the top
