Bacon Cheeseburger Soup
Ingredients:
-
1 pound ground beef (I usually double this)
-
8 slices of bacon cooked and chopped
-
1/2 onion diced
-
2 teaspoons minced garlic
-
1 tablespoon burger seasoning
-
1 cup frozen riced cauliflower
-
4 tablespoons butter
-
3 cups chicken broth
-
1 cup heavy whipping cream
-
3 cups of shredded cheddar cheese
Steps:
-
In a stock pot, brown the ground beef and drain off any excess grease.
-
Add in the diced bacon, diced onion, seasonings, riced cauliflower, and butter.
-
Continue cooking on medium head until the onions and cauliflower are soft.
-
Stir in the chicken broth and the heaving whipping cream.
-
Bring the soup mixture to a boil, reduce heat to low and simmer for 15 minutes.
-
Stir in the cheddar cheese. Continue stirring until it is melted.
I personally wanted to use a crockpot, so i left out the heavy cream and shredded cheese until right before serving.
